igor shalovinsky & Ian Verhelst
Igor grew up between the culinary culture of Antwerp and his Ukrainian family kitchen,
where cooking was never planned but passed down through tradition.
Rooted in honesty and resourcefulness, food became his language.
Over time, discipline and observation shaped a style balancing emotion with precision, seasonal, purposeful, and quietly expressive.

Growing up in the family wine business, Ian was surrounded from an early age by bottles, conversation, and tables meant for gathering. It was there that he developed a sensitivity for quality and an understanding that the feeling around a table often matters just as much as what is poured into the glass. Times spent in restaurants strengthened his instinct for reading a room and anticipating what guests need before it is spoken. His approach to hospitality is thoughtful and composed, guided by detail, sincerity, and the belief that true refinement should always feel natural.
